meat stewed in coconut milk

1 ib.(500g.)beef (cut into convenient pieces)
1-inch(2.5 cm)pieces laos/galangal (lightly crushed)
1 lemon grass(crushed)
4-1 bay leaf
3 tablespoons cooking oil
1-1/2 cups thin coconut milk
1 cup coconut cream
salt to taste
1 dessertspoon tamarind paste}
1/4 cup water                         }mixed&strained to extract juice

ground ingredients
10 shallots
5 cloves garlic
4 red chillies
1-inch (2.5 cm) piece turmeric root
1 dessertspoon corian der seeds \1-inch (2.5 cm) piece dried shrimp paste
4 candlenuts

1.season well the meat with the ground ingredients,galangal,lemon grass and bay leaves
2.heat oil and stir fry meat mixture for 5 minutes
3.add thin coconut milk.cook till meat is tender.add coconut cream and salt to taste.stir till the oil separates
4.discard bay leaves,galangal and lemon grass.mix tamarind juice into gravy.remove from flame.serve hot with boiled white rice,vegetables and sambal.
